Tomato and Olive Sauce - Food & Wine List

8-10 ripe tomatoes, seeded and chopped
1/4 cup green olives, chopped  (leave the pimiento in)
3 cloves garlic, minced
3 sprigs of oregano, stem removed, minced or 1 Tbsp dry
3 Tbsp minced fresh parsley or 2 Tbsp dry
salt
freshly ground black pepper
1/2 cup olive oil

Combine all the ingredients and let stand at room temperature at least 2 hours.  Serve over pasta.  Notes:  The herb amounts are approximate.  Use more if you like.  Can be made with basil in the place of oregano with good results.
