Pasta with Roasted Red Peppers & Cream - Food & Wine List


1 pound roasted bell peppers, peeled and seeded
8 cloves roasted garlic
1 c. heavy cream or creme fraiche
salt & pepper
Parmesan or Asiago cheese, grated
1 pound pasta

Puree roasted peppers with roasted garlic. Add heavy cream s & p to taste. Heat to reduce sauce slightly. Cook pasts; toss with sauce.
Dust with cheese.

Garnishes (optional)- small shrimp, scallops, morels, caviar.

Serves 4.
