Ratatouille - Laura Turman

1 purple onion (sauté briefly)
1 eggplant peeled and cubed
1 red pepper cut into cubes
1 yellow/orange pepper cut into cubes
2 zucchini (smallish) cut into cubes
2 or 3 cloves of garlic
1 can stewed tomatoes
1 cup or so of Ragu or other cheap-o-sauce
Italian seasoning 1-2 tsp
Sour cream amount as desired ½ to 1 c.

Cook all for a long time.  Think I cooked it for 30-45 minutes, adding sour cream at the end so it doesn’t break.
