Hummus - Craig Claiborne

2 cans chickpeas, rinsed and drained well
1/2 c. tahini
1/3 c. water
1/4 c. olive oil
6 tablespoons fresh lemon juice & 1 tsp or so of zest
4 garlic clove minced and mashed
1/2 tsp cumin
1 tstp corriander
salt and pepper to taste

1. Combine tahini, water,olive oil, lemon juice and garlic in food processor and process until smooth and light colored.

2. Add chick peas, cumin, coriander and process to puree. Add salt and pepper to taste. Adjust seasonings to your preference.

Note: add sliced roasted red pepper for a very tasty change, about 1/2 c. or more mixed in the processor with other ingredients.
