Salad with Blue Cheese - Moosewood Restaurant new classics 8
to 10 stalks 3/4 c. crumbled blue cheese 1/4 tsp. salt coarsely ground black pepper to taste 1 tbsp. extra-virgin olive oil Cut
the celery crosswise into 1/2 inch thick pieces to make about 4 cups sliced. Place
it in a serving bowl and sprinkle in the crumbled blue cheese. Add the salt, pepper
and olive oil and toss well. Served
Chilled. Serves 6 to 8
