Blueberry Salsa

I don't measure, but here's what I use:

--fresh blueberries
you can add to or substitute with: mango, chopped (jarred is okay if well-drained)
--sweet red bell pepper, chopped
--jalapeno or habanero pepper, finely chopped
--finely chopped red onion or scallions
--grated fresh ginger
--soy sauce
--mirin, or something kind of sweet (a short slug of real maple syrup works in a pinch)
--chopped cilantro (or parsley, if you're one of those who hates it)
--fresh lime juice
--salt and pepper

I taste as I go along, and adjust the heat level to the diners' tastebuds. This salsa is very good served with grilled salmon. Serve it fairly soon after making it, as the liquid bleeds out and the cilantro wilts if it's held too long.
